Baked Summer Chicken

Start your summer off right with this marinated, baked chicken. Great for small dinner parties to impress your friends, impress your significant other with a romantic dinner, or even just for a night in by yourself, this dish will get you in the summer spirit.
Materials:
- Large Bowl
- Whisk
- Half-Sheet Pan
- Cutting Board
- Chef Knife
- Measuring Cups (solid and liquid)
- Measuring Spoons
- 1 Gallon-Sized Storage Bag
- Mortar and Pestel
- Cooking Spray
- Meat Thermometer
Ingredients:
- 1 ¾ cups white cooking wine
- 1/2 cup lemon juice
- 1 Tbsp olive oil
- 1 Tbsp minced onion
- 2 Tbsp minced garlic
- 1 Tbsp freshly crushed black peppercorns
- 1 tsp whole black peppercorns
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1 Tbsp salt
- 2 boneless chicken breasts (fresh or frozen)
Steps:
- In a large bowl, whisk together the wine, lemon juice, olive oil, onion, garlic, crushed peppercorns, whole peppercorns, oregano, basil, thyme, and salt.
- Use the mixture to marinade the chicken breasts for 2-24 hours before cooking.
- Once you’re ready to start cooking, preheat the oven to 350°F.
- Lightly grease the half-sheet pan with cooking spray, place the marinated chicken on the tray, and bake for 30 minutes.
- After 30 minutes, increase the temperature to 425°F and let the chicken bake for another 15-20 minutes to brown the outside.
- Once the chicken is browned, test the temperature with your meat thermometer to ensure the core temperature is 165°F.
- Plate the chicken and serve.
Tips
- Remember to finish your mise en place (everything in place) before you start cooking to save time and stress throughout the process.
- If using frozen chicken, remember to thaw it beforehand.
- If using fresh, raw chicken, always make sure to store it in a sealed, clean container on the bottom shelf of your fridge to ensure it will not drip or touch other foods.
- Do not wash raw chicken, cooking will eliminate bacteria and washing it may contaminate surfaces due to splashing.
- Remember to thoroughly wash your hands with soap and water before and after touching raw chicken, including during the process when you need to touch other utensils.
- If you want to refrigerate the chicken, wait for it to cool down for an hour before putting it in the fridge.
